A lefse undertaking: Cross Lutheran prepares for Cookie Fair

That was the mantra Saturday morning at Cross Lutheran Church in Roberts for their annual lefse making event.
Lefse is the Scandinavian take on a tortilla. Basically, the treat is thinly rolled, cooked mashed potatoes with flour added.
The group made over 100 dozen rounds of lefse that morning. The lefse will be sold at Cross’s Cookie Fair on Saturday, Dec. 6.
The goodies go up for sale promptly at 9 a.m., said organizer Karen Cowles. There will be a line started by that time. It ends at 1 p.m.
Lefse is $10 for a dozen rounds, or $1 per slice. The lefse makers will have their griddles fired up that day to sell hot batches.
Cookies of every variety will be sold for $8 a pound. Mix and matching is allowed.
Crafts, pies and “our famous chicken salad” will also be for sale, said Cowles.
“It’s the place to be,” Cowles said with a smile.
